I would give Linux Mint a spin. It's a Ubuntu/Debian based distro, and I found it pretty user friendly. I sort of miss having it installed on my main PC actually (switched to Arch/KDE), and I still have it installed on my laptop. As far as gaming is concerned, I believe there are some distros...

You really don't need to spend a thousand bucks on a GPU, unless you really want to crank things on 4k for some reason. I have over 130 hours into Death Stranding between the director cut and original; I think it's a great game. Whether Pippa is capable of playing it to completion and enjoying it, ehhhh.... It's a patience game until you really get routes sorted out a lot of the time.
