Looks to me like she baked it in the mixing bowl, which looks like it's made of silicone or something. She essentially put a heat insulator around her cake.
True cheesecakes are very much gigantic custard pies. As such when they just about "don't look done yet" in the oven, it's time to move them the fuck out. Otherwise you risk burning the top and curdling like it happened there.
It just occurred to me that scrambled eggs (correct ones anyway) are similar.

I recoiled at first at the picture, too. But, I think you're right. It's white bread, some spread (jam or Nutella), Cheetos and Ham slices.
Okay, I can absolutely vouch for the Cheetos + Ham, having been a young child at one point. Nutella on bread is fine. But that's a combo straight out of a Dead Space game.
I mean... most flan I've had is flat like that. It looks really good tbh, also the plate she's using is beautiful, even with the couple of chips from bad handling.
